Gluten is not my friend


I have a confession to make...I might have eaten some gluten in my Thanksgiving meal. I went to a friend's house and did ingest some gluten (unintentionally), but paid for it for days. I realize just how sensitive I am and how cognizant I need to be. Normally I am very conscious of what is in EVERYTHING I eat, but that day was not the day. 
I want you all to know that it's so important to make sure everything you eat, touch and drink can have wheat in it. I am here for you to ask questions, tell me concerns you've had and your story. Celiac Disease is a life-long disease and I hope to help in some way for those concerned, suffering and surviving the lifestyle, because it IS POSSIBLE. On a lighter note, tonight I am going to a blogger event at Whole Foods. This event will be “A Night with Chef Chad Sarno”. This will be a great opportunity to meet other bloggers, get ideas and spread the word of 'Gluten-Free Living Is Possible'. Keep an eye out for the next post about the event.

Gluten Free and plenty to be thankful for

Thanksgiving, a time for thanks and gratitude. There is so much to appreciate all year long, and Thanksgiving reminds us to look back and think of all the things in which we are thankful. If you have a gluten allergy or Celiac Disease, it may seem like eating and dining is difficult, and especially the traditional meal at Thanksgiving, but remember you do have a lot to be thankful for. First off, remember that you are not alone in your dietary restrictions. There are so many others that are struggling with this lifestyle, as well as thousands of resources such as blogs, support groups, brands of food, medical professionals and others out there facing the same issues. And secondly, think of all the progress the Gluten-Free and Celiac Disease world  has improved over the past 5 years. The variety of choices for substitutes is amazing. Here are some helpful tips to try and make your cooking for Thanksgiving more helpful and enjoyable. 

-If dining with others, bring your own dish pre-made GF and encourage others to try
-Substitituing Gluten-Free flour into your gravy, instead of regular All-Purpose Flour (tastes great)
-Make your own corn bread muffins to have instead of rolls (beware of mixes, be sure to buy GF Mix)
-Bake delicious flourless chocolate cake, crust-free pumpkin pie or delicious GF cookies, only having to substitue the flour
-Create your own stuffing using GF bread and breaking into medium chunks and mix in spices, chicken stock
-And remember these dishes are naturally gluten-free if made without additives: Turkey, Ham, Sweet Potatoes, Mashed Potatoes, Green Bean Caserole (without onion shreds), corn, green beans and so much more.

Pereg is perfect

If you are looking for a great quinoa with a kick of spice, try Pereg Quinoa. I made this recently for a dinner party I was having and it was a hit! I knew my guests were interested in eating healthy, trying something new and Pereg Southern Style was the perfect item to serve. Gluten Free Pasta, yum yum yum

I cannot be more pleased with a pasta-Ancient Harvest is fantastic! I recently made a delicious pasta dish using elbow pasta, vegetarian marinara sauce and a Gluten-Free turkey burger. Making your favorite recipes is easy and I find that it can be a painless and simple process, leaving you to feel no sense of awkwardness when dining with Gluten eaters. Sometimes it becomes hard to go to parties, friends and families without feeling like you cannot eat a regular meal, but Ancient Harvest makes cooking and eating completely delicious and enjoyable. I have never felt so good after eating pasta, like I do after eating Ancient Harvest. 
And, not only is this pasta delicious and Gluten-Free, but it is extremely low in calories and fat. Over the past 10 years, the low-carb fad has been a serious talk, especially pasta is something people tend to stray from......but with Ancient Harvest, you don't have to do that. Sweet, Simple and Savory

Do you want a sweet treat for breakfast, snack or post-dinner snack? Well instead of reaching for that pie or sugary cake, take a bite of Lara Bars, the most amazing alternative to sugary, calorie filled desserts. The three flavors in which I enjoyed the most were the Chocolate Coconut Chew, Carrot Cake and Apple Pie. 
These delicious bars give you not only the energy you need, but also satisfying flavors, while remaining healthy. 
I LOVED the chips of chocolate and hearty pieces of coconut in this bar (pictured below). It can be difficult to find a snack that's convenient, tasty and gives you enough flavor, while being Gluten-Free, so rest assured, you have now found the Lara Bar.

Gluten-Free Pancakes



These are the best pancakes I've ever eaten! My Dad bought me this mix and made them alongside a banana and milk and what more could I ask for. The texture, consistency and flavor was better than I've had with any pancake with wheat in it. These make great left-overs as well. The directions on the back call for making probably more pancakes that one needs at a time, so I like to make the full serving and then have them for a snack later. To reheat simply put them in the oven, microwave or even toaster (of course a toaster that hasn't been contaminated with wheat or gluten). Enjoy and know that you're eating a Gluten-Free friendly and healthy meal.

How Jamie Oliver is changing the world

Food. It's a source of energy, health, growth and friendship. But lately, or for the past 30 years, food has started killing our country. I am sorry if that sounds too intense, but it is the truth. The amount of sugar, fats, excess calories and processed ingredients in food is atrocious. Food is a means to live and enjoy, whereas now food is shortening the lives of people, creating cancer, disease and mortality. The food that our culture consumes is shortening the lifespan of the next generation. 
I have always been a follower of Jamie Oliver, but over the years I have been so grateful for his mission to change the world and how we look at food.

Ancient Harvest Quinoa Pasta

 

Pasta, Pasta and more pasta! Those with Gluten allergies have to stay away from pasta and it being a main staple in our culture and delicious food, and it is a misfortune to be without it. Ancient Harvest Quinoa makes your taste-buds happy again with their Gluten Free Linguine. GF pasta does not taste exactly like wheat pasta, but actually I believe it's ever BETTER! Dining Out means making choices....

I have always said that no matter where you go, it can be possible to have a Gluten Free meal, and I do still believe that. Unfortunately in today's culture, gluten is EVERYWHERE, and when I say that I mean it's everywhere. When coming back from Pennsylvania last weekend I stopped in Atlanta and when bypassing all the fast food and unhealthy options available at most airports, I sat down at TGI Friday's. I know, not the healthiest of choices, but when looking for a savory meal I figured my chain restaurant would not only have options, but at least be aware of GF allergies.
When receiving the GF menu from the waiter, (which was good to see that they had a display of allergies contained in all foods), but unfortunately almost EVERY food at Gluten in it. I was shocked and even when I thought I would choose a healthy item such as the chicken salad, I came to find out that the chicken was marinated and had wheat in it.
After seeing all my choices, I went with the Grilled Burger with lots of veggies and a potatoes for my side, instead of anything that might have been fried...
 
After this experience, I really urge you to ask more questions, think of what MIGHT contain wheat and take ownership that you have a Gluten Allergy or choose not to eat Gluten. I recently told a friend that if a food makes you sick, making others realize you're serious about it, makes them realize your limitations.
I know that my Celiac Disease is a huge part of my life because it has drastic effects if I eat Gluten. I know it can be a bit of challenge, but you can do it!

Jambalaya Gluten Free Goodness

So tonight my lovely roommate surprised me by making amazingly wonderful Jambalaya for dinner. While making this amazing dish we needed to add something extra and found the perfect addition to the meal------ Gluten Free Amylu Chicken Andouille Sausage. This creation was the perfect example of how you can make a low calorie, inexpensive, Gluten-Free and delicious meal. This simple recipe included Zantaran's Jambalaya mix, sautéed chicken breasts, chicken sausage. We simply simmered the chicken and sausage in the mix with some water to blend all flavors together and added some broccoli for our side vegetable. 
I hope you enjoy making and eating this as much as I did.

Crunch, Crunch, Crunch

Cruchmaster crackers are my new find. They are not only healthy, but Gluten Free!! I first heard of Crunchmaster when I was browsing the isle of Gluten Free options at the store, and I stumbled upon these amazing crackers. They looked tasty, sounded like a great snack and after reading the label, discovered that they are really nutritious and low in fat. 



I am partnering with Crunchmasters and trying three of their products and first on the list is the Multi-Grain Sea Salt cracker. 
Besides being healthy, they are super tasty by themselves, as well as with dip, cheese, peanut butter, and other spreads. My favorite combination thus far as been putting hummus spread on top. Roasted Red Pepper hummus makes the salty, sweet combination just right. 
I love the salty flavor these crackers have and they don't exude too much salt that you feel bloated afterwards. 
Try these tasty crackers and indulge while knowing that you are eating a safe, Gluten Free product, as well as healthy and delicious. Watch for my next blog where I will feature another great flavor from Crunchmaster.

Macaroon flavored granola bar from KIND

Oh my gosh, I have just tried the amazing granola bar of a lifetime-it's the Almond and Coconut granola bar from KIND. I think this is the best one of the varieties that I've tried yet. 

 I immediately love the coconut flavor burst in my mouth. I felt like I was eating a delicious, mouth-watering, decadent cookie, but the good news is that I could feel good after eating it-guilt-free. 
Unlike when you eat a cookie or sugary treat and you feel a tinge of remorse for your waistline, this amazing granola bar from KIND offers a healthy, tasty and low-calorie, low glycemic and beyond tasty treat.

Peanut Butter + Chocolate= Heaven






I just ate the most delicious granola bar ever invented! The sweet combination of Peanut Butter and Chocolate, while still being filled with protein, low sugar and fresh ingredients, is amazing!! Besides amazing flavor, there are 7 grams of protein, so it's perfect for a snack, pre/post-work out, on the run in the morning, or even a mid-night snack. 
It's better than having a candy bar because there is no guilt in it-how much better can it get? 
Also, I just want to say again what a great job KIND does with their display packaging. It is so eye-catching, simple, and sophisticated.

I was standing in line at wal-mart and was looking for something healthy to snack on since I'm pregnant and can't eat junk food. I've never had or heard of 'Kind' so I bought one and to my surprise they're delicious. They're healthy, contains protein and a whole bunch of goodness. I love these and one day I'll buy the pack and try the other flavors.

Quinoa Salad

6-8 servings
½ cup red quinoa 1 hass avocado, diced
½ cup white quinoa ½ cup minced scallion, white parts only
1½ tsp kosher salt, divided 3 Tbs of sliced green tops
1 poblano pepper, seeded & diced
(about 1 cup)
½ cup chopped cilantro
1 small yellow pepper, seeded & diced (about 1 cup) 4 Tbs freshly squeezed lemon juice
1½ cups corn kernels
(from about 3 ears)
6 Tbs extra virgin olive oil, divided
1 medium zucchini, diced
(about 1 cup)

 ~Place the quinoa in a 2 qt. pot with 2 cups of water and 1 tsp of salt. Bring to a boil over high heat, the reduce heat to a simmer and cover and cook for 20 minutes.
~While the quinoa is cooking, shuck and shave the corn, dice the vegetables and chop the cilantro. You can also make the dressing at this time by whisking 4 Tbs of olive oil and lemon juice.
~When the quinoa is done, fluff it with a fork, transfer it into a large serving bowl and place the bowl in the fridge to cool.
~Heat a large sauté pan over med high heat for 1 minute. Add the olive oil, poblano, yellow pepper and white parts of the scallion. Season with a about ½ teaspoon of salt. Cook for about 3 minutes or until the peppers begin to soften, stirring frequently. Add the corn and zucchini to the pan, season again with another ¼ tsp of salt and cook for about 5 minutes, stirring frequently.
~Remove the vegetables from heat and set aside to cool.
~Once both the quinoa and the cooked vegetables have cooled to at least room temperature, toss them all together in the large bowl. Stir in the avocado, scallion tops and cilantro. Drizzle the dressing over the salad while stirring everything. Season with salt and pepper to taste.

Spice up your life...

Cashew & Ginger Spice granola bar-how fantastic these little bars are. I have honestly never eaten a granola bar with more flavor, fullness and overall low calories and low sugar. I am a granola girl at heart and find that with all of the amazing varieties out there, it is sometimes difficult to find low-fat, Gluten-Free, low-sugar and most importantly delicious-but with KIND granola bars, I have found a winner. 
I first tried the Cashew & Ginger Spice bar from KIND when it was that hunger time, around 2:30 and past lunch, but of course dinner was hours away.......and then, I remembered that I had put one of these little treats in my purse. My first thought was how great the ingredients looked. I immediately noticed the cashews, and they weren't ground up in a concoction and mixed in with lots of sugar, but instead with lots of ginger, protein and flavor. 
After eating this delicious and nutritious snack, I felt energized and satisfied. With so many options that KIND offers, I really thinks highly of these. They are good for a snack, great for hiking and running activities in need of an energy boost, and give you a great sense of joy and fullness.

Peanut Butter Gluten Free Granola Clusters


Peanut Butter.....the simple joy in life. It's an old classic that is so tasty, filled with delicious satisfaction. I love this granola from KIND because not only does it have vibrant flavors of peanut butter, nutty aromas, flavorful taste, but it's Gluten-Free.

I'm KIND of in Love!

I cannot be more impressed, overwhelmed, overjoyed and thrilled with the little package that arrived at my doorstep two days ago....After contacting KIND company, and corresponding to have them send me samples for my blog, I was expecting a couple granola bars and some treats, BUT never did I expect the full spread in which they provided me to write about.

Baked By Joanna

As I was working on my new facebook page, I stumbled happily upon a neat page and website called 'Baked By Joanna'. Joanna's page features delicious recipes, party-planning fun and an overall vivid and colorful site offering lots of great dishes. Joanna's page is not a website featuring only GF, but rather I wanted to share with you a place that has 'normal' recipes, which I'd like to show you that you can make too. http://www.bakedbyjoanna.com/


By this I mean that every recipe can be altered to cater to your diet. Each recipe, ingredient and tasty morsel has the opportunity to be Gluten Free friendly. For example, see Joanna's recipes below. Her latest post labeled Friday Favorites is not only delicious, but perfect for a summer night with some ice cream on the side. 
It is the Caramel Brownies....

Ingredients
  • 1 cup unsalted butter, sliced
  • 12 oz bittersweet chocolate, chopped
  • 1/2 tsp ground espresso
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 11 oz chewy caramel candies
  • 1/4 cup heavy cream
  • 1 1/2 cups hazelnuts, chopped
  • 1 cup semi-sweet chocolate chips
Instructions
  1. Preheat the oven to 350 degrees F and coat a foil-lined 9"x13" baking pan with nonstick spray; make sure to leave an overhang of foil. Set aside.
  2. Using a double-boiler, melt the butter and bittersweet chocolate making sure to stir constantly with a rubber spatula. Stir in the espresso.
  3. Whisk in the sugar, eggs and vanilla extract until the smooth and shiny.
  4. Using a spatula, fold in the flour and salt just until combined.
  5. Pour half the batter into the prepared pan and bake for 20 minutes. Remove the brownie from the oven and cool on a metal rack for 30 minutes.
  6. Meanwhile, melt the caramel candies and cream in a metal pot on medium heat; stir constantly to prevent burning.
  7. Sprinkle half the hazelnuts on the baked brownie layer, pour the melted caramel evenly over the nuts and finish by pouring the remaining brownie batter on top and evening the surface with a spatula. Sprinkle the remaining hazelnuts over the top along with the chocolate chips.
  8. Bake for 20 minutes. Transfer the brownies to a metal rack to cool completely in the pan. Once cooled, use the foil overhang to lift from the pan; slice into 24 squares and serve
In this- I want you to see that it's simple enough to make this treat GF friendly---
simply, substitute the All-Purpose flour with Gluten-Free rice or other flour that follows your diet. 
And, to make this treat even healthier-substitute the eggs for egg whites or apple sauce.

As a blogger, wow, when did I become a blogger? It has been on my mind for years, and have read so many people's feelings, opinions and great tips, but never thought I'd really create a blog and help others. 
I want to be as helpful to others as I can be, so please leave me questions, comments, ideas, etc for me to discover and write about.

Celiac Disease?

Celiac Disease? What an odd name for such a serious disease. Celiac Disease is a life-long disease that is genetic, meaning those with the disease are born with it and a will always have to live by a certain lifestyle and diet. 


A technical definition of CD from the Celiac Disease Foundation is below: 

'Celiac Disease (CD) is a lifelong inherited autoimmune condition affecting children and adults. When people with CD eat foods that contain gluten, it creates an immune-mediated toxic reaction that causes damage to the small intestine and does not allow food to be properly absorbed. Even small amounts of gluten in foods can affect those with CD and cause health problems. Damage can occur to the small bowel even when there are no symptoms present.
Gluten is the common name for the proteins in specific grains that are harmful to persons with celiac disease. These proteins are found in ALL forms of wheat (including durum, semolina, spelt, kamut, einkorn and faro) and related grains ryebarley andtriticale and MUST be eliminated.'
